HEAD CHEF @ Hamburg &##127465;&##Edmondo " (Hamburg) is looking for a passionate Head Chef (M/W/D) : join us in a stunning historic venue - a former 1897 bank building with golden vault doors - and bring authentic Italian cuisine to life; you’ll lead our kitchen in creating exceptional dishes with true Italian flair.
Quality Management
Collaborate on menu changes with the Executive Chef: propose new seasonal recipes, draft recipe sheets, implement menu updates, train the team, and take part in research & development (R&D) sessions.
Kitchen Operations Management
Ensure compliance with hygiene and safety standards.
Monitor and manage monthly food cost / F&B performance against budget targets.
Ensure proper use and maintenance of kitchen equipment.
Oversee onboarding of new kitchen recruits: preparation for their arrival, and weekly follow-up from their first week.
Train and support the kitchen team daily: share vision, transfer knowledge, delegate responsibilities, propose training initiatives, and conduct talent evaluations.
Monitor and support the team’s training progress.
Participate in at least one service per week in collaboration with the Sous Chefs.
