1. Preparation and execution of sushi and sashimi dishes according to authentic Japanese techniques.
2. Quality control and assurance to meet 5-star luxury standards.
3. Daily mise en place and organization of the sushi section.
4. Collaboration in menu planning, seasonal adaptations, and special offers.
5. Training and guidance of new team members and apprentices.
6. Maintaining hygiene, HACCP standards, and food safety regulations at all times.
Requirements
* Completed training as a sushi chef, ideally with an international background.
* Minimum 3–5 years of experience in high-end Japanese or luxury hotel restaurants.
* Mastery of sushi and sashimi preparation (maki, nigiri, sashimi, uramaki, special rolls).
* Creativity in menu development (including fusion-inspired rolls as reflected in the menu: e.g., Hot Futo Maki, Koji Beef Roll, Peking Duck Roll).
* Strong sense of quality, precision, and presentation.
* Positive charisma, enthusiasm, and high motivation.
* Excellent teamwork, communication skills, and guest-oriented service approach.
Desirable
* Experience in training junior chefs.
* Knowledge of German or English at a communicative level.
* Familiarity with European luxury hotel standards.
