Hauptaufgaben Serves as a working supervisor of approximately 20 employees, 3 food service leaders, and 2 cashiers in accomplishing food service work in a major food and beverage department, the "Summit Restaurant and Café" of the Edelweiss Lodge and Resort Hotel in Garmisch, Bavaria. Prepares schedules for the department, takes inventory of china, glass, and silverware, and requests issues from the warehouse to update per on hand. Monitors and issues cleaning materials to subordinates, orders materials when necessary, and trains, disciplines, and rates food service personnel. The incumbent is generally responsible for restaurant and café sanitation, buffet management, and cash collecting. Communicates to the team instructions received from management and assigns the immediate tasks to be performed by individual members of the team. Checks work in progress and, when finished, checks for compliance with standards, work sequence procedures, methods, and deadlines. Demonstrates proper work methods. Answers team member questions regarding procedures, policy, written instructions, and other directives. Obtains needed information or decisions from the assistant restaurant manager on problems that come up during work. Provides information to management on status and progress of work, causes of delays, and overall work operations and problems (e.g., additional on-the-Job training requirements for individual employees). Ensures safety and housekeeping rules are followed (e.g., machine capacities are not exceeded, tools are properly used). Works alongside other workers, setting the pace. Provides buffet meal service and monitors the process of refilling, serving dishes, and maintaining a clean and sanitary appearance in the service area. Directs prompt and courteous service to patrons in accordance with established policy and procedures. Supervises the service area and returns food, pans, and utensils to the kitchen after buffet service is finished. Monitors food and beverage servicing trays, the salad bar, and that warmers are adequately stocked to meet attending patrons' desires. Receives guests and makes suggestions or answers questions about food, wines, and other beverages available. As a restaurant supervisor, assists in setting up assigned work areas. Sets assigned tables including linen, glasses, silverware, condiment holders, flowers, candles, lamps, etc. Performs other duties as assigned.
