About the Role
As Food Service Manager, you will report to the Deputy Portfolio Manager and hold full operational accountability for dining facility (DFAC) services across three Bavarian military training areas: Grafenwöhr, Hohenfels, and Ansbach. This role oversees all aspects of food service operations, regulatory compliance, quality assurance, and kitchen staff leadership in support of U.S. military personnel. The position plays a critical role in maintaining service standards, meeting contractual performance metrics, and ensuring safe, compliant, and efficient meal service operations.
Key Responsibilities
* Manage DFAC operations across breakfast, lunch, dinner, and late-night meal periods serving high-volume military personnel.
* Implement and maintain TB MED 530 compliance, including sanitation standards and medical screening requirements.
* Ensure achievement of customer satisfaction score targets and contractual meal service rate requirements.
* Supervise food service managers, kitchen staff, and rotating site personnel across assigned locations.
* Oversee food preparation operations, ensuring recipe standardization, portion control, and compliance with Defense Subsistence Initiative nutritional standards.
* Coordinate daily operations with Site Coordinators, Compliance & Quality Manager, and Senior Food Services Advisor.
* Provide daily headcount reporting and contribute to required contract deliverables and performance documentation.
* Maintain high standards of food safety, quality control, and operational readiness at all sites.
Requirements
* Associates degree plus 5+ years of total relevant experience, including 3+ years in a U.S. DoD DFAC lead role within the past 10 years.
* ServSafe Manager and HACCP certifications.
* Demonstrated experience managing food service facilities supporting large and variable military populations.
* Proven knowledge of TB MED 530 compliance and Tri-Service Food Code requirements.
* Fluency in English required; German language proficiency preferred.
* Ability to travel locally between Bavarian training areas.
* Relocation support available.
