Responsibilities
* Organization of the Pizzeria´s kitchen including preparation, set-up, supervision and follow-up of our rich and amazing Pizza menu,
* Monitoring food stock, ordering and storing top quality goods (such as truffle) for the Pizzeria,
* Adopting innovative, healthy and low-fat ingredients to appeal to a larger audience (for example, vegan cheese and gluten-free kamut flour),
* Cooking innovative appetizers such as mozzarella sticks, pizza bites, bruschettas and focaccias,
* Creating, testing and recommending new recipes to update our menus,
* Preparation of pizzas out of our menu and based on custom orders if required,
* Baking a wide variety of pizza doughs,
* Preparation of tomato sauce, pesto and sauces,
* Slicing and chopping toppings like cheeses, vegetables and meats
* Synergical collaboration with the F&B Manager, the Executive Chef and the Sous Chef
* Onboarding and training of the direct report (Junior Pizzaiolo),
* Guaranteeing a clean cooking station and sterilizing equipments, searching for constant compliance with hygiene regulations according to HACCP as well as adherence to and daily implementation of Company Standards.
Requirements
* At least 4-5 years of experience as a Pizza Chef in a top-level Pizzeria
* Hotel School diploma with high grade,Hands-on experience with preparing and baking pizza doughs,
* Deep understanding of food hygiene and HACCP
* High time-management skills,
* High team spirit,
* Customer centricity, high attention to details, problem solving, punctuality, proactivity, flexibility and team building skills are a must,
* High flexibility to work in shifts, including weekends and evenings
* High openness to cooperate with the other cooking lines when necessary and required,Italian and
* English confidence are mandatory. German language skills are also required (minimum B1)
* Legal right to work in Italy.
