Hauptaufgaben The major duties center on large‑scale food preparation, safe meal service, and maintaining high sanitation standards. The role involves preparing and cooking bulk and individual portions for regular and modified diets across all meal periods. This includes reviewing menus and recipes, measuring ingredients, and performing a full range of cooking techniques—from roasting and baking to steaming and braising. The cook prepares meats, vegetables, sauces, soups, casseroles, breakfast items, salads, desserts, and beverages, while ensuring proper seasoning, portioning, and adherence to dietary requirements. Operating mixers, grinders, steam kettles, and other industrial kitchen equipment is a routine part of the job, along with strict compliance with HACCP procedures, temperature controls, and inventory rotation to prevent spoilage. In addition to cooking, the position includes setting up serving lines, assembling trays according to diet orders, preparing sandwich bars, and ensuring accurate placement of food items based on meal tickets. The cook may also prepare specialized diets such as low‑sodium, diabetic, pureed, or blenderized meals. Cleaning responsibilities are extensive and include maintaining sanitary work areas, washing equipment and utensils, and ensuring ovens, ranges, and floors are properly cleaned. In some settings, the cook coordinates and oversees the work of lower‑graded staff, ensuring menu items are prepared correctly and supervising teams of six or more employees.
