Hauptaufgaben The primary purpose for this position is to serve as a cook in charge of a shift operation in an Army Troop Dining Facility. Prepares and cooks or all food item in bulk quantities or individual servings for regular and/or modified diets required for morning, noon evening, late meals and/or special feedings. Reviews menus, work sheets and recipes, and determines type and quantities of item required for number of persons to be served-and recipe requirements. Cuts and trim to cooking size, and weighs or measures portions and ingredients for regular or modified diets in accordance with menus, recipes, or other instructions. Prepares fruits and vegetables by cleaning, peeling, and/or cutting. Working alone or with a higher-grade cook, roasts, broils, bakes, fries, boils, steams, braises, or otherwise cooks meats, fish, poultry and fruits and vegetables. Regulates cooking temperatures and steam pressures; times cooking process; checks condition of food and turns and bastes neat as required; seasons food; and carves, portions meat. Prepares and cooks sauces, gravies, soups, stews, casserole dishes, hot cereals, pancakes and French toast and cooks eggs in a variety of ways. Prepares raw and cooked salads; makes dressings; and prepares gelatin, custards, and other simple deserts. Cooks hot breads and may prepare baked goods such as cakes and pastries. Prepares coffee, tea and other beverages. Makes sandwiches. Operates, in accordance with safety regulations, various mixers, grinders, steam kettles, electric urns, and other powered and mechanical and specialized kitchen equipment to cook food in large quantities used in the preparation and service of food. Sets up and serves hot foods on cafeteria lines and portions foods for individual servings on trays in accordance with regular or modified diets as indicated by instructions. Loads containers for food carts. Stores leftovers as required in accordance with sanitation standards. Cleans and maintains in sanitary condition equipment and work areas, sweeping and mopping floors, washing utensils, tables and refrigerators, and cleaning ovens and ranges. Directs, and instructs as necessary, lower graded cooks (A2-3) and mess attendants (A1-2) assigned in the simpler cooking activities, preparation of vegetables and fruits for cooking or raw use, and in cleaning equipment and work areas. Performs other duties as assigned.
